This is one of the most basic and simple chicken quesadilla recipes that you will ever find. I took a recipe I found for easy shredded chicken, added in some cheese and tortillas, and voila!
Shredded chicken quesadillas that are perfect for a Mexican-styled dinner at home. Pair with Spanish rice, corn, or any other side to create an excellent meal.
Ingredients:
1 lb. chicken breast
1/2 can of salsa
Shredded Mexican Cheese Mix
8 small tortillas
Extra salsa, ranch, or other dipping sauces
Directions:
- For the best and easiest shredded chicken you'll ever find, layer chicken breasts into crock-pot. Cover the chicken with the 1/2 can of salsa, or more, if you so choose. Set on low for 8 and a half hours, or on high for 4 hours.
- Once designated time has past, remove chicken from crock-pot. The chicken will literally shred itself! (The chicken tastes wonderful by itself and is certainly a healthy alternative to the quesadillas!)
- Layer shredded cheese and chicken onto one half of each small tortilla. Add more than you think necessary, as the grilling process will shrink the quesadilla size.
- Heat and spray George Forman or other grill of your choice with cooking spray -- I like to use the Olive Oil spray.
- Fold tortilla to in half to create a half-moon shape and place in grill. Leave for 3-5 minutes, or until cheese is melted.
- Pair with salsa, sour cream, or ranch for dipping.
- Enjoy!
