Nonny's Brown Rice

I'm not sure if it's because I love tradition or if it's because I'm a Southerner, but I absolutely love recipe cards. There's something so timeless about a recipe card that can be passed down through generations. One thing I'm so glad I did before my grandmother passed away was ask her to hand write some of her favorite recipes. I knew there was a chance that I wouldn't be able to call her and ask, and I also knew she would eventually lose her ability to write, and so these cards are something I will treasure forever.

Nonny's brown rice has always been one of my favorite things. She made it for as long as I can remember, and my mom continues the tradition. It's incredibly simple and incredibly delicious, but when you see brown rice, this isn't the newest health recipe. It's full of butter, goodness, and Southern charm, and I'm not sure if I love it because it taste so good or because my grandmother made it. Here's a little taste from Nonny's kitchen. Hope you enjoy!

Cook Time: 45 minutes

Ingredients:
1/2 cup rice
1/2 stick butter
1 small onion
1 can beef consomme 

Dice onion. Chop margarine into small pieces. Mix all ingredients together. Cook at 375 degrees for 45 minutes or until liquid is absorbed. Stir occasionally. Serves 4. Double recipe for larger group.
