Brunching: Breakfast Casserole

Breakfast is probably my favorite meal of the day, and I love finding a good recipe that keeps on giving. This breakfast casserole is so easy, and you can even prepare everything the night before, store it covered in the fridge, and pop it in the oven the next morning, which is what I did. Though I only made this for two people, it made more than a plenty, and could easily feed 6-8 people. It's great for brunches or even Christmas morning, and is even still delicious reheated in the microwave as well. Hope you enjoy!

Ingredients:
1 can crescent roll dough
12 eggs
2 cups of shredded cheese
3 cups of shredded hashbrowns
4 breakfast sausage links
1/4 cup milk

Directions:
  1. Preheat oven to 350 degrees.
  2. Cook sausage links until done and cut into small pieces. Place on paper towel to drain.
  3. Roll out crescent roll dough into greased casserole dish. Pinch together the perforations so the dough completely covers the bottom of the dish
  4. Spread hash browns evenly over the crescent roll dough
  5. In a bowl, beat eggs, add in milk, sausage, and 1/2 cup of the cheese and mix
  6. Spread the egg mixture over the hash browns
  7. *Optional: Cover the dish and store in the fridge overnight, if you are wanting to make ahead
  8. Bake in oven for 40-45 minutes, or until eggs are firm
  9. Remove casserole and sprinkle the remaining cheese on top
  10. Place back in oven for another 5 minutes or until the cheese is melted
  11. Enjoy!
