The Taste: Shredded Chicken Quesadillas


This is one of the most basic and simple chicken quesadilla recipes that you will ever find. I took a recipe I found for easy shredded chicken, added in some cheese and tortillas, and voila! 
Shredded chicken quesadillas that are perfect for a Mexican-styled dinner at home. Pair with Spanish rice, corn, or any other side to create an excellent meal.

Ingredients:
1 lb. chicken breast
1/2 can of salsa
Shredded Mexican Cheese Mix
8 small tortillas
Extra salsa, ranch, or other dipping sauces

Directions:
  1. For the best and easiest shredded chicken you'll ever find, layer chicken breasts into crock-pot. Cover the chicken with the 1/2 can of salsa, or more, if you so choose. Set on low for 8 and a half hours, or on high for 4 hours.
  2. Once designated time has past, remove chicken from crock-pot. The chicken will literally shred itself! (The chicken tastes wonderful by itself and is certainly a healthy alternative to the quesadillas!)
  3. Layer shredded cheese and chicken onto one half of each small tortilla. Add more than you think necessary, as the grilling process will shrink the quesadilla size.
  4. Heat and spray George Forman or other grill of your choice with cooking spray -- I like to use the Olive Oil spray.
  5. Fold tortilla to in half to create a half-moon shape and place in grill. Leave for 3-5 minutes, or until cheese is melted.
  6. Pair with salsa, sour cream, or ranch for dipping.
  7. Enjoy!
Serves 4.

This is literally the easiest chicken quesadilla recipe! It's perfect for the picky eater, for kids, and for adults! This makes a great appetizer or for the main course of a meal.
